Huatl Amaranthus

Traditionally used to make the central Mexican confection – alegria (made with popped seeds and honey). From a Nahua market in Tulyehualco outside Mexico City. The edible greens taste best before flowering. Plants can grow 6-9′ tall, and produce multiple green flower heads with some red tinge.
