Amaranthus gangeticus.
An ornamental Amaranthus variety plant with a compact growth habit (2-3′ tall), and giant burgundy flower heads shaped like an elephant’s trunk. An heirloom from the late 1800s. Thrives in summer heat and well-drained soils in vegetable gardens and flower borders.
