Foeniculum vulgare var. azoricum Traditional Italian bulbing fennel. The crunchy, dense, bulbous stem has a delicious, licorice-anise flavor and can be eaten raw, sautéed, fried, and used in soups or pasta. It's feathery foliage is also an excellent fresh garnish. Harvest when base begins to fatten.
